Very high protein, gluten-free (for our gluten sensitive friends) and versatile: Eat as a typical brekkie with maple syrup or put a couple together around a burger for a very hip sandwich.
These remind me of growing up in Texas, when Mum would fire up the waffle iron on a Sunday morning.
We like ours with bacon and real maple syrup (not that fake “maple flavoured” version…avoid that crappy cousin of Canada’s most appreciated export)

INGREDIENTS
Non stick oil spray
Dry
1 C Almond meal
1 Tsp Baking Soda
1 Tsp Cinnamon
Pinch of salt
Wet
4 Eggs
1 Banana, very ripe
1 Tbs Vanilla extract
1/8-1/4 C Honey
PREPARATION
PREHEAT the sprayed waffle iron.
PLACE dry ingredients in a medium sized bowl and mix thoroughly.
IN a second, larger bowl, thoroughly mix the wet ingredients.
ADD the dry ingredients to the wet and mix thoroughly. Set the batter aside to thicken a bit.
POUR the batter into the waffle iron.
REMOVE when cooked.
TOP with bacon, fresh fruit, maple syrup, nut butter… Have fun!
